Lizzy and I attended a cooking demonstration at the resort to prefect our guacamole skills! I’m excited to try out Antonio’s recipe, maybe for Super Bowl Sunday!

Sautéing In Stilettos

While in Mexico, I went to a poolside cooking class where I learned to make some delicious guacamole.

You will need:

1/2 white onion, chopped

3 tomatoes, diced

1/2 bunch cilantro, finely chopped (large stems removed)

1/2 habanero green pepper, seeds removed and finely chopped (optional)

Lime juice from 1/2 lime

6 ripe avocados, diced (save pits!)

Salt and pepper

Add ingredients to bowl and mix.

Serve with taco chips, enjoy!  Save leftovers in an airtight container WITH pit inside, this will prevent browning.

A big thanks to Antonio for some fabulous guacamole that I ate for breakfast, lunch and dinner in Mexico!!!  (Swim cover, Target)
